Eating healthy, fresh, local food is easy and fun for some; but for many, eating lots of veggies at a time is a big challenge. Many of us are not used to this green appetite and haven’t learned how to eat – or convince our family to eat – these new foods. Nevertheless, the green life goal remains in all of us.
Achieving a goal never happens overnight. It always springs from lots of hard work and little steps which all contribute to reaching the desired outcome. The same idea applies to one leaf at a time.
The one leaf at a time principle is about encouraging people to eat more healthy, fresh produce by adding just a bit of a new veggie to a meal you already know how to make. Start small by taking one leaf out from a veggie, slicing it up real thin, and adding it to the dish! The idea is to consume local and organic produce by including them in more of your home-cooked meals.
It’s best to try one veggie at a time on a regular basis instead of eating lots of veggies in a single meal. This increases the chances of getting used to eating more greens in the long-run. In this way, the one leaf at a time strategy helps us to take things slowly and not get overwhelmed. It also teaches us to appreciate and connect with our food more intimately. And since your family may not even notice that they’re now eating their veggies, you’ll likely find less food waste and pressure in the kitchen. Lastly, the more we connect with our food, the more likely we’ll learn to appreciate how it’s produced. Our appreciation for small things could lead to a bigger thing in the long-run.
For many, consuming more local produce won’t happen overnight. Instead, it takes a lot of small steps and dedication before reaching the ultimate goal. So for now, let’s have it one leaf at a time!
